It may sound a bit silly, but when I'm not traveling and treat myself to a delicious worldly dish, I really feel like I'm on the other side of the world again.
Where many world travelers mainly make a sport of getting as much as possible cheap countries to visit and 'check off', others (like me) prefer to stay longer in one place or in a country to not only experience the culture, but also taste it. I've always been curious about what people eat around the world. I want to taste! Sometimes it doesn't, but most of the time it doesn't. There are dishes that I have tasted in different corners of the world and that I still make myself at home!

Bring the world cuisine into your home
The smell and taste of dishes brings the world cuisine (and associated memories) back into your living room. A perfect way to reminisce about the trips you've ever taken.
Spend an afternoon in the kitchen, turn on the travel photos as a slideshow on your TV, play the music you heard during the trip and relive it in your own living room! In a next article I will share my recipe for a delicious pad Thai (picture above), but in this article I'm going to treat you first to a delicious variation on the green curry: Thai Patties!
Get inspired for new world dishes
You often come home after a long journey and before you know it you are back in your daily routine. Not only do you get in the car to work every morning, but those routines permeate all facets of your life, from work to exercise and eating.
Because you start living, working and thinking in routines so quickly, you often forget that there are those delicious dishes that you can make again. I therefore try to help myself every now and then with some cooking inspiration, for example by doing something Aldi brochures to download, which contains new world dishes every week.
You can gain inspiration for tasty dishes or complete recipes, which you can follow step by step. Whatever your preference, it certainly helps to choose another world dish, instead of the dishes in your weekly routine. Give it a try!
Recipe Thai Patties (with green curry)
You have Thai Curry and you have Thai Curry. You can choose to start with jars and bags, which already contain everything. Cook rice, fry meat, add pre-cut vegetables and add a sauce. This way you are probably ready within 20 minutes and you will reach roughly 70% of the Thai green curry taste.
If you want to get the last 30% of the real, authentic Thai flavors into your home, you will have to put in a little more effort. Pre-cut vegetable bags do not contain fresh ginger, lime leaves, lemongrass, basil and coriander. No, the real Thai flavors require a little more work.
If you can fill your house for one or two hours on a quiet Sunday afternoon with delicious oriental smells and flavors, isn't that fantastic?

Based on Bangkok street food
Tried the dish for the first time in Bangkok, the capital of Thailand. Just bought on the street at a streetfood tent, just like the locals do. I didn't know what happened to me! The rice was suddenly no longer one of the main ingredients, but optional. The curry came in a patty, thickened and good. I have tried to copy the dish. It took several attempts to imitate it, but after about 10 attempts we managed to make the perfect recipe.
Below I therefore share (my personal) Thai patty recipe with you. So it's a tasty variation on the 'standard' Thai green curry with rice. Instead of just serving white rice with curry, in this dish you thicken the curry with cornflour so it can be served in a patty. The creamy dough of the freshly baked pie from the oven suddenly gives the dish a completely different dimension next to the white rice.
Ingredients (3-4 persons)
- 500 grams of chicken fillet
- 150 grams frozen peas
- Half cup (chestnut) mushrooms
- 1 small can of bamboo shoots (tuna size)
- 1 can of "mini corn"
- 1 red peppers
- (variation and/or extra vegetables can be: carrot, zucchini and sugar snap peas)
- 3 cans of coconut milk
- 50 grams grated coconut
- Green Curry Pasta (preferably Mao Ploy brand)
- 10-15 sprigs of fresh coriander
- 2 cloves of fresh garlic
- 50 ml rice oil
- 8-12 patties
- Thai Basmati rice (optional as a side dish)
- 12 lime leaves
- 3-4 pieces of lemongrass
- Fresh ginger
- 1 red pepper
Tip: | Use chicken thigh meat instead of chicken breast. The meat is more tender and full of flavour.
Preparation
- Cut the mushrooms in half and then cut them into thin slices.
- Cut the bell pepper into thin strips.
- Chop the ginger into small cubes.
- Roughly chop the coriander, including stalks.
- Cut the lemongrass into stems of +- 10 centimeters
- Weigh the peas.
- Chop the garlic as finely as possible.
- Cut the chicken into thin strips of 3-4 centimeters in length so that it cooks quickly.
Preparation method
- Pour a (large) dash of rice oil into the pan, roughly 50 ml.
- Add 2 heaping tablespoons of green curry paste.
- Add the garlic, chicken and one can of coconut milk.
- Add 1 can of coconut milk.
- Only then turn on the fire (highest setting). The chicken must be cooked/steamed in the oil and not seared too hard, so do not preheat the pan.
- Keep stirring the mixture until it is almost done
- Now add the lime leaves, chopped ginger and pieces of lemongrass and fry for 1-2 minutes
- Deglaze the whole with 3 cans of coconut and then add the peas and mushrooms
- Lower the heat, the mixture with coconut milk should be slowly brought to a boil. If it boils too fast, it will curdle, you absolutely do not want this. Be patient and keep stirring so that the milk heats evenly.
- In the meantime, taste whether you like the sweetness/spiciness. If you want sweeter, you can add more coconut milk (or in the worst case some regular milk and some sugar). If you want more green curry flavor (slightly spicier), add more green curry paste here.
- Taste now also whether the salt is enough, usually you will want to add some salt to taste.
- When it finally boils gently (and you keep stirring) try to let it bubble gently for another 5 to 10 minutes, keep stirring regularly (important!).
- If you go for the patties, thicken it with cornflour while it is gently cooking. Tip:: First mix the cornflour with a little cold water before adding it, otherwise you will get lumps!
To serve
- Bake the pies in the oven.
- Place the patty in the center of the plate.
- Press the insides of the patties with a spoon (so that more curry can go in).
- Spoon two large soup spoons of Thai curry into the patty so that it is completely filled with curry and the remains around the patty fill the plate.
- Garnish with some freshly chopped coriander.
- Place a small ball of Thai Basmati rice next to it.
- And have fun!
